Chicory Flower – All endive varieties (Cichorium endivia & C. intybus) produce, at summer’s end, tall stems with striking, sky-blue flowers.

The petals can be pulled off and added to salads for their earthy, endive-like flavour. The unopened flower buds can also be pickled like capers.
